About the Almond Feta

The almond feta used in this salad is a plant-based, brined cheese made from blended almonds and cultured for tang and depth of flavor.

Once set, it develops a firm, sliceable texture that crumbles beautifully — very similar in function to traditional feta, but lighter and entirely dairy-free.

It brings three key elements to the salad:

  • Creaminess

  • A gentle fermented tang

 In this version, the cheese is lightly cultured, then set and stored in a salty brine — allowing it to firm up while absorbing flavor over time. The result is a clean, crumbly feta-style cheese that works well in salads, grain bowls, roasted vegetables, or simple mezze plates.
