Green Bean Salad with Roasted Almonds & French Dressing

🛒 Ingredients
For the Salad:

300–400g green beans (flat or French-style)

1 small handful almonds

1 small red onion, julienned

6–8 cherry tomatoes, quartered

A small bunch of fresh parsley, roughly chopped
For the Dressing:

1 garlic clove, finely smashed or minced
-
1 tsp Dijon whole grain mustard
-
1 tsp honey (or maple syrup if vegan)

2–3 tbsp vinegar (apple cider or white wine vinegar work well)

2–3 tbsp olive oil
-
Salt to taste

White pepper to taste
🔪 Instructions

Prep the green beans:

If using flat beans, slice them lengthwise into thin julienne strips.

If using round French-style green beans, leave them whole.

Blanch the beans in boiling salted water until just tender (al dente), then immediately cool in ice water or run under cold water to preserve their bright color. Drain well.

Toast the almonds:

Dry roast the almonds in a pan until golden and fragrant.

Let them cool slightly, then crush roughly with a pestle and mortar (or the bottom of a glass if needed).

Make the dressing:

In a small bowl, mix the smashed garlic with mustard, honey, vinegar, salt, and white pepper.

Slowly whisk in the olive oil until emulsified and smooth.

Assemble the salad:

In a large bowl, combine the cooled and drained green beans, red onion, cherry tomatoes, parsley, and crushed almonds.

Pour the dressing over and toss everything together gently.

Garnish (optional):

Finish with edible flowers, microgreens, or extra chopped herbs if you have them.
