Mango Gazpacho

 Ingredients

2 medium large heirloom ripe tomatoes

1 large ripe mango

1 Italian green pepper

1 small cucumber

1 green onion

1 garlic clove

2 tablespoons extra virgin olive oil

1-2 tablespoons apple cider vinegar

1/2 teaspoon salt

Method:

  • Peel and clean veggies and mango.

  • Cut all ingredients into large chunks.

  • Blend on high speed for 1-2 minutes until smooth and oil is emulsified.

  • Garnish with diced cucumber, tomatoes, peppers, mango, or croutons
