Mint Hummus + Crudités + Sourdough

A fresh and vibrant hummus perfect for serving with crudités and bread.

Ingredients:

  • 1 large can chickpeas (300-400g dried weight)
  • Fresh mint, large bunch
  • Small bunch spinach (for color)
  • Olive oil
  • White tahini (¼ to ⅓ cup)
  • Salt to taste
  • Reserved chickpea liquid or water for blending

Instructions:

  1. Drain chickpeas, reserving the liquid
  2. Combine all ingredients in a blender
  3. Add reserved liquid slowly while blending until desired texture is reached
  4. Blend until fully emulsified and smooth

Serving Suggestions:

Serve with fresh crudités such as:

  • Cauliflower
  • Cucumbers
  • Asparagus
  • Bell peppers
  • Cherry tomatoes
  • Radishes
  • Sourdough or pita bread

Seasonal Variation:

For a spring version, replace chickpeas with fresh or frozen green peas.
